Tender chuck roast slow cooked in a savory BBQ-infused sauce, resulting in succulent, flavorful, pull-apart meat with a hint of sweet and smokiness

Ingredients

  • 3-4 pound beef chuck roast

  • 1 12 ounce beer

  • 1 cup bbq sauce

  • 1 tablespoon tomato paste

  • 1 whole white onion

  • 3 cloves garlic, peeled

  • 1 whole bay leaf

  • 1 1/2 tablespoon salt

  • 1 1/2 tablespoon ground black pepper

  • 1 tablespoon olive oil

  • 2 whole dried peppers (chipotle, ancho, etc)

Directions

  • Preheat the oven to 350°.
  • Generously season the beef chuck roast with salt and ground black pepper.
  • Heat olive oil in a dutch oven over medium-high heat. Sear each side of the seasoned chuck roast for 3-4 minutes, or a total of 6-8 minutes.
  • A a small mixing bowl, stir together the beer, bbq sauce, and tomato paste. Pour over the seared chuck roast. There should be enough liquid to cover 3/4 of the chuck roast, which is what we want.
  • Quarter or slice the onion – which ever you prefer – and it to the dutch oven along with the garlic, bay leaf, and dried peppers. Push these ingredients along the sides of the chuck roast and into the liquid.
  • Cover the dutch oven and transfer it to the oven. Cook for 3 hours and 20 minutes at 350°.
  • Allow the dutch oven and chuck roast to cool slightly before shredding. Once it’s cooled, using tongs and a fork, shred the beef apart and thoroughly mix into the braising liquid. It should coat the beef nicely.
