  • For the Tomato Rice
  • 1 cup long-grain white rice (jasmine or basmati)

  • 2 tablespoons extra virgin olive oil

  • 2 cups chicken broth

  • 1 cup crushed tomatoes

  • 1 small onion, diced

  • 1 small green bell pepper, diced

  • 2 ribs celery, diced

  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1 tablespoon soy sauce

  • For the Charred Okra
  • 2 cups okra, sliced into rounds

  • 2 shallots, thinly sliced

  • 1 tablespoon avocado oil

  • 1 tablespoon red wine vinegar

  • 1/4 teaspoon red pepper flakes

  • 1 teaspoon parsley, freshly chopped

  • 1/2 teaspoon salt

Directions

  • Cook the Rice: Bring chicken broth to a boil in a small saucepan. Stir in the rice, cover, and reduce the heat to low. Cook until tender, 10 minutes. Remove from heat and keep covered for 5 minutes.
  • Build the Tomato Base: Heat the extra virgin oil over medium heat in a large skillet. Add the onion, bell pepper, and celery, and cook for 2-3 minutes. Stir in the garlic, smoked paprika, cayenne, thyme, and oregano. Cook until fragrant, then add crushed tomatoes, soy sauce, and Worcestershire sauce. Stir in the cooked rice, and season with salt and ground black pepper to taste. Simmer for 10 minutes to let the flavors meld.
  • Prepare the Chicken: Place the chicken breasts between sheets of parchment or plastic wrap. Pound to an even thickness, about ½ inch thick. Brush both sides with melted butter. Mix smoked paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and pepper, then coat the chicken evenly in the spice blend.
  • Blacken the Chicken: Heat a cast-iron (or any oven-safe) skillet over medium-high until it’s very hot. Add the chicken and sear for 3–4 minutes per side, until a dark crust forms. Transfer to a 375°F oven and cook for 8-10 minutes until cooked through. Rest for 5 minutes before slicing.
  • Char the Okra and Shallots: Heat a skillet or wok over high heat until it’s smoking. Drizzle in the avocado oil and add the okra and shallots. Cook undisturbed for 1-2 minutes until blistered. Stir-fry until cooked through, 2-3 minutes. Toss in the salt, red pepper flakes, and red wine vinegar. Remove from heat and finish with parsley.
  • Plate and Serve: Spoon the tomato rice onto plates, top with sliced blackened chicken, and finish with charred okra and shallots.
