The Perfect Pasta Choice: Angel Hair

Angel hair pasta, also known as capellini, is delicate and cooks in just minutes, making it the ideal base for this flavor-packed brown butter sauce. Its thin strands absorb the sauce effortlessly, ensuring every bite is infused with buttery, garlicky goodness.

Brown Butter: The Star of the Dish

Brown butter, or beurre noisette, is the heart of this dish. By melting unsalted butter and cooking it until golden brown, it develops a deep, nutty aroma and toasted flavor that adds incredible depth. The key to perfect brown butter? Swirl the pan and watch closely to prevent burning, ensuring the butter transforms into a rich, golden hue with a warm, caramelized fragrance.

Garlic & Cherry Tomatoes: A Perfect Balance

Once the brown butter is ready, minced garlic is added, infusing the sauce with its bold, savory essence. Then, fresh cherry tomatoes burst with juicy sweetness, balancing the richness of the butter with a slight acidity that brightens the dish. As the tomatoes soften, their natural juices create a light, flavorful sauce that clings beautifully to the pasta.

Finishing Touches for Maximum Flavor

To elevate the dish even further:

  • Fresh basil: Adds a fragrant, slightly peppery note that enhances the tomatoes and butter
  • Grated Parmesan cheese: Brings a salty, umami depth that melts beautifully into the warm pasta
  • Extra virgin olive oil: A final drizzle enhances the richness and gives a silky finish
  • Fresh parsley & black pepper: For an herby, slightly peppery contrast

Brown Butter Garlic Angel Hair Pasta is a simple yet sophisticated dish featuring delicate angel hair pasta tossed in rich, nutty brown butter and garlic. The fresh, juicy flavors of cherry tomatoes complement the dish, which is garnished with fragrant basil and Parmesan cheese.

Ingredients

  • 12 ounces angel hair pasta

  • 1/2 cup unsalted butter

  • 6 cloves of garlic, minced

  • 1 pint cherry tomatoes, halved

  • 1/4 cup Parmesan cheese, grated

  • 1/4 cup basil, freshly chopped

  • 1 tablespoon extra virgin olive oil

  • to taste, salt and ground black pepper

Directions

  • Cook the Pasta:
Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, drain the pasta and set aside.
  • Brown the Butter:
In a large skillet, heat the butter over medium heat. Allow the butter to melt and then continue to cook, swirling the pan occasionally, until it turns golden brown and develops a nutty aroma, about 5-7 minutes. Be careful not to burn the butter.
  • Sauté the Garlic and Tomatoes:
Add the minced garlic to the browned butter and cook for about 1 minute, until fragrant. Add the cherry tomatoes and a pinch of salt. Cook, stirring occasionally, until the tomatoes soften and release their juices, 3-4 minutes.
  • Combine Pasta and Sauce:
Add the cooked angel hair pasta to the skillet with the brown butter, garlic, and tomatoes. Toss to combine, adding reserved pasta water a little at a time to create a light sauce that coats the pasta.
  • Season and Serve:
Season with salt and ground black pepper to taste. Drizzle with extra virgin olive oil and toss again to combine.
  • Garnish and Enjoy:
Serve the pasta immediately. Garnish with grated Parmesan and chopped basil.

Notes

  • Browning the Butter: Watch the butter closely as it browns to prevent it from burning. It should turn a deep golden color and have a nutty aroma.
  • Tomatoes: To add extra flavor, roast the cherry tomatoes in the oven before adding them to the skillet.
