Ingredients

  • For the Patties
  • 1 pound shrimp, peeled and deveined

  • 1/2 cup breadcrumbs

  • 1 large egg

  • 2 green onions, chopped

  • 1/2 cup red bell pepper, finely chopped

  • 2 cloves of garlic minced

  • 1 tablespoon Cajun seasoning

  • 1 tablespoon parsley, freshly chopped

  • For the Cajun Seasoning
  • 2 teaspoons paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon salt

  • For the Caramelized Onions
  • 2 large yellow onions, thinly sliced

  • 1 tablespoon unsalted butter

  • 1 tablespoon extra virgin olive oil

  • a pinch of salt

  • For the Purple Cabbage Slaw
  • 2 cups purple cabbage, shredded

  • 1 large carrot, julienned

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1/2 tablespoon honey

  • to taste, salt and ground black pepper

  • For the Smoky Remoulade
  • 1/2 cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 teaspoon hot sauce

  • 1 tablespoon Cajun seasoning

  • 1 tablespoon lemon juice, freshly squeezed

  • 1 clove of garlic, minced

  • 1 tablespoon capers, finely chopped

  • to taste, salt and ground black pepper

  • For Serving
  • 4 brioche buns

Directions

  • Make the Cajun Seasoning:
    Combine all the Cajun seasoning ingredients. Mix well and set aside.
  • Prepare the Cajun Shrimp Patties:
    Place half the shrimp in a food processor and pulse until smooth. Coarsely chop the remaining shrimp for texture.

    In a large bowl, combine the processed shrimp, chopped shrimp, breadcrumbs, egg, green onions, bell pepper, garlic, parsley, and 1 tablespoon Cajun seasoning. Season with salt and ground black pepper. Mix until just combined. Form into 4 patties. Cover and refrigerate for 15-20 minutes to firm up.
  • Caramelize the Onions:
    Heat the butter and extra virgin olive oil in a skillet over medium-low heat. Add the onions and a pinch of salt. Cook, stirring occasionally, for 25-30 minutes, until the onions are soft and golden brown.
  • Prepare the Purple Cabbage Slaw:
