Restaurant-Quality Shrimp Pasta

Creamy Shrimp, White Corn, and Chipotle Gnocchi is a delightful fusion dish that combines the rich, comforting elements of Italian cuisine with the vibrant, smoky flavors of Mexican ingredients. This restaurant-worthy recipe features tender shrimp, sweet white corn, spicy chipotle peppers, and pillowy gnocchi all enveloped in a luxurious cream sauce that delivers an unforgettable dining experience.

What Makes This Chipotle Shrimp Gnocchi Special

This isn’t ordinary pasta it’s a sophisticated flavor journey that starts with rehydrated chipotle peppers soaked until their deep, smoky essence fully develops. These chipotles create the foundation for a cream sauce that perfectly balances heat, smokiness, and richness without overwhelming the delicate shrimp and gnocchi.

The contrast between the soft, pillowy potato gnocchi and the succulent, perfectly cooked shrimp creates a textural masterpiece in every bite. Sweet white corn kernels add pops of freshness and natural sweetness that cut through the richness of the sauce. Fresh basil and crumbled queso fresco finish the dish with brightness and a subtle tanginess that complements the smoky heat.

How to Create the Perfect Chipotle Cream Sauce

The secret to this extraordinary dish lies in the carefully crafted chipotle cream sauce. Rehydrated chipotle peppers are sautéed with translucent onions and aromatic garlic, creating a flavorful base that infuses the entire dish. The white corn kernels contribute additional sweetness and subtle texture as they simmer in the developing sauce.

When heavy cream is added, it transforms these components into a velvety, luxurious sauce with the perfect consistency to coat each piece of gnocchi and shrimp. The richness of the cream perfectly balances the smoky heat of the chipotles, creating a harmonious blend that’s simultaneously bold and refined. Queso fresco stirred in at the final moment adds creaminess while maintaining its distinctive texture.

Ingredients

  • 1 pound shrimp, peeled and deveined

  • 1 pound gnocchi

  • 3 ears of white corn, kernels removed

  • 2 dried chipotle peppers, rehydrated and finely chopped

  • 3 cloves of garlic, minced

  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • 1 cup vegetable broth

  • 1/2 cup queso fresco cheese, crumbled

  • 1/4 cup basil, freshly chopped

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon butter

  • to taste, salt and ground black pepper

Directions

  • Prepare the Chipotle Peppers:
Rehydrate the dried chipotle peppers by soaking them in hot water for 15-20 minutes. Once softened, remove the stems and seeds, and finely chop the peppers. Set aside.
  • Sauté the Shrimp:
Heat 1 tablespoon of extra virgin olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Season the shrimp with salt and ground black pepper. Add the shrimp to the skillet and sauté until they are pink and cooked through, 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  • Cook the Vegetables:
In the same skillet, add the remaining tablespoon of extra virgin olive oil. Add the chopped onion and sauté until it becomes translucent, 3-4 minutes. Add the minced garlic and chopped chipotle peppers, and sauté for another 2 minutes. Add the corn kernels and cook until they are tender and slightly charred, 4-5 minutes.
  • Cook the Gnocchi:
Add the gnocchi to the skillet with the vegetables. Cook for 1-2 minutes, stirring occasionally, until the gnocchi browns slightly.
  • Prepare the Cream Sauce:
Pour in the vegetable broth, stirring to deglaze the skillet. Add the heavy cream and bring the mixture to a simmer. Cook for 5-7 minutes until the sauce thickens slightly and the gnocchi are fully cooked. Stir in most of the crumbled queso fresco until it’s melted and well combined. Season with salt and ground black pepper to taste.
  • Combine and Finish:
Fold the sautéed shrimp into the skillet, gently mixing to combine all the ingredients. Stir in the chopped basil.
  • Serve:
Serve the dish in bowls, garnished with additional crumbled queso fresco and fresh basil.
