It is believed – most prominently by renowned food critic James Beard – that the breakfast egg sandwich originated in the late 1800s/ early 1900s by Chinese railroad workers, attempting to reconstruct Egg Foo Young. Either way, it was a staple among blue collar workers on the go, and that arguably hasn’t changed much since its fast food commercialization.

The Egg and Cream Cheese Breakfast Sandwich is a delightful combination of fluffy scrambled eggs, creamy cream cheese, and optional additional ingredients. Perfectly fluffy scrambled eggs, cream cheese, and everything seasoned sandwich buns (or bagel) makes for a quick, easy, and delicious brunch option

Ingredients

  • 6 whole eggs

  • 1 tablespoon butter

  • 2 tablespoons heavy whipping cream

  • 2 whole everything flavored sandwich rolls or bagels

  • 4 tablespoons chive and onion cream cheese

  • salt and pepper to taste

Directions

  • Whisk together eggs, whipping cream, salt and pepper. Whisk vigorously for 20-30 seconds for fluffier texture.
  • Melt butter over low-medium heat in a non stick frying pan.
  • Pour beaten egg mixture into frying pan and scramble for approximately 5-6 minutes. You can remove from heat just prior to completion to prevent burning.
  • Toast sandwich buns (or bagels) to your desired liking.
  • Spread one half with 2 tbsp cream cheese. Top with scrambled eggs.
