The Grilled Corn, Zucchini, and Asadero Cheese Salad is a vibrant summer dish featuring smoky grilled vegetables, creamy asadero cheese, and a zesty lime vinaigrette.

Ingredients

  • 3 ears of corn, husked

  • 2 large zucchinis, sliced into strips

  • 1 cup asadero cheese, cut into cubes

  • 1/2 cup green onions, freshly chopped

  • 1/2 cup cilantro, freshly chopped

  • 1/4 cup extra virgin olive oil

  • 1 lime juiced and zested

  • 1 tablespoon red wine vinegar

  • 1 tablespoon honey

  • 1 clove of garlic, minced

  • to taste, salt and ground black pepper

Directions

  • Grill the Corn and Zucchini:
    Preheat your grill to medium-high heat. Brush the corn stalks and zucchini strips with a bit of the extra virgin olive oil and season with salt and ground black pepper.

    Grill the corn stalks for about 10 minutes, turning occasionally, until charred and tender. Grill the zucchini strips for 3-4 minutes per side until they have nice grill marks and are tender. Remove from the grill and let cool slightly.

    Cut the kernels off the corn cobs and place in a large bowl. Slice the grilled zucchini strips into bite-sized pieces and add to the bowl.
  • Prepare the Vinaigrette:
    Whisk together the extra virgin olive oil, lime juice, lime zest, red wine vinegar, honey, minced garlic, salt, and ground black pepper until well combined.
  • Assemble the Salad:
    Add the asadero cheese cubes and freshly chopped cilantro and green onions to the bowl with the grilled corn and zucchini. Drizzle the vinaigrette over the salad and toss gently to combine.
