  • 1 pound russet potatoes, peeled and cubed

  • 6 cloves of garlic, minced

  • 3 tablespoons unsalted butter

  • 1/4 cup whole milk

  • 2 tablespoons extra virgin olive oil

  • to taste, salt and ground black pepper

Directions

  • Rehydrate the Dried Chipotle Peppers:
    Place the dried chipotle peppers in a bowl with hot water. Let them soak for 20 minutes until they are soft enough to chop finely.
  • Marinate the Chicken:
    Combine the chopped chipotle peppers, honey, extra virgin olive oil, apple cider vinegar, Worcestershire sauce, soy sauce, minced garlic, ground cumin, lime juice, salt, and ground black pepper in a large bowl. Mix well. Add the chicken thighs to the bowl and coat them well with the sauce. Cover and marinate for at least 30 minutes.
  • Roast the Potatoes:
