Ingredients

  • 2-3 pounds country-style (boneless) ribs

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon paprika

  • 1 tablespoon brown sugar

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 1 tablespoon sesame oil

  • 2 dried chipotle peppers

  • 1/2 cup honey

  • 1/4 cup rice vinegar

  • 1 tablespoon soy sauce

  • 1 tablespoon Worcestershire sauce

  • 2 cloves of garlic, minced

  • Roast the Pork Ribs:
    Preheat your oven to 300°F (150°C). Brush the ribs with extra virgin olive oil and wrap them tightly with aluminium foil. Roast in the oven for 2 1/2 hours.
  • Rehydrate the Dried Chipotle Peppers:
    Cover the dried chipotle peppers with hot water. Let them soak for 20 minutes until they are soft. Once soft, remove the stems and seeds and finely chop the peppers.
  • Prepare the Honey Chipotle Glaze:
    Combine the finely chopped chipotle peppers, honey, rice vinegar, soy sauce, Worcestershire sauce, minced garlic, and sesame oil in a medium saucepan. Bring the mixture to a simmer over medium heat while stirring occasionally. Reduce the heat to low and cook for 10-12 minutes until the sauce thickens. Remove from the heat.
  • Finish the Ribs with Honey Chipotle Glaze:
    Increase the oven temperature to 425°F (220°C). Brush the roasted ribs with the honey chipotle glaze. Return the ribs to the oven and roast for 20 minutes until the glaze is caramelized and sticky. Keep a close eye on them to prevent burning.
  • Finish and Serve:
