The Vibe
Bruges during the day is a madhouse of guided tours and horse-drawn carriages. To escape it, you have to squeeze down an unmarked, shoulder-width brick alleyway tucked between two retail shops. Push open the heavy wooden door at the end, and the outside world completely disappears. Staminee De Garre is the definition of a sanctuary. Spread across three cramped, creaking floors of a building that dates back to the 1500s, it smells faintly of old wood, spilled beer, and deep Flemish history.
What To Order
You sit down, and you order the Tripel van De Garre. They do not bottle it. They do not distribute it. The only way to drink this beer is to occupy a stool in this exact building.
Served in a bulbous, massive glass goblet alongside tiny cubes of young cheese (a brilliantly simple fat-pairing trick to coat the stomach), the tripel clocks in at a lethal 11% ABV. Yet it drinks dangerously smooth, with huge notes of stone fruit, clove, and honey. They strictly limit you to three glasses per visit, and for very good reason.
