  • For the Caramelized Vidalia Onions
  • 2 large Vidalia onions, thinly sliced

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon unsalted butter

  • 1 tablespoon balsamic vinegar

  • For the Pizza
  • 1 ball of pizza dough

  • 1 tablespoon extra virgin olive oil

  • 2 ripe peaches, thinly sliced

  • 2 ounces Gorgonzola cheese, crumbled

  • 4 ounces goat cheese, crumbled

  • 1 tablespoon thyme leaves

  • 2 ounces prosciutto, torn

  • 1 tablespoon honey

  • freshly ground black pepper

Directions

  • Caramelize the Onions: Heat the butter and extra virgin olive oil in a large skillet over medium-low heat. Add sliced Vidalia onions and a pinch of salt. Cook slowly, stirring occasionally, for 30–40 minutes, until the mixture is deeply golden and sweet. Stir in the balsamic vinegar 5 minutes before the end. Set aside.
  • Preheat Oven: Heat your oven to 500–550°F (260–285°C), or as high as your oven safely goes, with a pizza stone or baking steel inside if you have one.
  • Build the Pizza: On a floured surface, stretch or roll out the pizza dough into a 12-inch round. Transfer to a parchment-lined peel or baking sheet.

    Brush lightly with extra virgin olive oil. Spread an even layer of caramelized onions across the dough. Add the peach slices, then scatter gorgonzola and goat cheese over top.
