Ingredients

  • 2 cups rolled oats

  • 1/2 cup hazelnuts, chopped

  • 1/4 cup peanuts, chopped

  • 1/2 cup creamy peanut butter

  • 1/4 cup honey

  • 1/4 cups shredded coconut, unsweetened

  • 2 tablespoons coconut oil, melted

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon salt

Directions

  • Preheat the Oven:
    Preheat your oven to 325°F (160°C), and line a baking sheet with parchment paper.
  • Mix the Wet Ingredients:
    Melt the peanut butter, honey, coconut oil, and vanilla extract in a small saucepan over low heat. Stir until the mixture is smooth and thoroughly combined.
  • Combine the Dry Ingredients:
    Mix the oats, chopped hazelnuts, peanuts, cinnamon, salt, and coconut flakes in a large bowl.
  • Combine and Bake:
    Pour the melted peanut butter mixture over the dry ingredients and stir well to coat everything evenly. Spread the granola evenly onto the prepared baking sheet. Bake for 20 minutes, stirring halfway through to ensure even toasting.
