The Pomegranate Pineapple Smoke cocktail combines smoky mezcal with fresh pomegranate juice, homemade pineapple syrup, and a frothy egg white finish for a tropical yet bold sipping experience. This vibrant drink balances sweetness, tartness, and smokiness in every sip.

Ingredients

  • 2 ounces mezcal

  • 2 ounces pomegranate juice, freshly extracted

  • 2 ounces pineapple syrup

  • 1 ounce lime juice, freshly squeezed

  • 1 egg white

  • ice cubes

  • For the Pineapple Syrup
  • 1 cup pineapple, chopped

  • 1/2 cup sugar

  • 1/2 cup water

Directions

  • Dry Shake:
    Add the mezcal, pomegranate juice, pineapple syrup, lime juice, and egg white to a cocktail shaker without ice. Shake vigorously for 15-20 seconds to create a frothy texture.
  • Shake with Ice:
    Add ice to the shaker and shake again for 10-15 seconds to chill the cocktail.
  • Serve:
    Strain the mixture into a rocks or coupe glass. Garnish with a mint leaf, lime wheel, and/ or pineapple wedge, depending on your preference.
  • For the Pineapple Syrup:
  • Combine the pineapple chunks, sugar, and water in a saucepan over medium heat. Stir until the sugar dissolves and the pineapple begins to break down, 7-8 minutes. Strain through a fine mesh sieve, pressing gently to extract the liquid. Let the syrup cool before using.
