Prickly Pear Agua Fresca is a vibrant and refreshing drink that combines the exotic flavor of prickly pears with the natural sweetness of honey and a hint of lime. This unique beverage is perfect for staying cool and hydrated on warm days.

Ingredients

  • 4 prickly pears, peeled and chopped

  • 4 cups water

  • 1 lime, juiced

  • 2 tablespoons honey

  • ice

  • for serving, lime wedges

Directions

  • Blend the Prickly Pears:
    Combine the water and chopped prickly pears in a blender. Pulse for several seconds until the mixture is smooth.
  • Strain:
    Pour the mixture through a fine mesh sieve into a large pitcher to remove any pulp and seeds.
  • Combine Flavors:
    Return the strained prickly pear mixture to the blender. Add the honey and lime juice, and blend until combined.
  • Chill:
    Transfer the blended mixture to a pitcher. Refrigerate for at least 1 hour to let the flavors meld.
  • Serve:
    Fill a glass with ice cubes. Pour the chilled Prickly Pear Agua Fresca over the ice. Serve with a fresh lime wedge.

Notes

  • Storage Advice: Store the agua fresca in an airtight container in the refrigerator for up to 3 days. For the best flavor and freshness, consume within the first 24-48 hours.
  • Using Xanthan Gum: Add a pinch (about 1/8 teaspoon) of xanthan gum to your agua fresca while blending to help bind the ingredients, giving it a smoother consistency and preventing separation. Be careful not to add too much, as it can thicken the drink.
