Ingredients

  • 4 fillets of cod (6-8 oz. each)

  • 1 can (28 oz.) San Marzano tomatoes

  • 2 tablespoons extra virgin olive oil

  • 2 shallots, finely chopped

  • 3 cloves of garlic, minced

  • 1 tablespoon dried oregano

  • 1/2 teaspoon red pepper flakes

  • to taste, salt and ground black pepper

  • for garnish, freshly chopped parsley

Directions

  • Prepare the Cod Fillets:
    Pat the cod fillets dry with paper towels. Season both sides of the fillets with a pinch of salt and ground black pepper. Set them aside while you prepare the tomato sauce.
