Ingredients

  • 1 3/4 cups roasted peanuts, unsalted

  • 3 ripe bananas

  • 1/2 cup unsalted butter, melted

  • 1 cup brown sugar

  • 2 large eggs

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon sea salt

  • For the Sea Salted Caramel Sauce
  • 1/2 cup brown sugar

  • 2 tablespoons unsalted butter

  • 1/4 cup heavy cream

  • 1/2 teaspoon sea salt

Directions

  • Make the Peanut Butter:
    Process 1 1/2 cups of roasted peanuts in a food processor until they reach a smooth, butter-like consistency. Scrape down the sides as needed to ensure even processing.

    Chop the remaining 1/4 cup of roasted peanuts and set aside to use for the crunchy topping later.
  • Prepare the Salted Caramel Sauce:
    Melt the brown sugar in a small saucepan over medium heat – stirring constantly to prevent burning – until it turns a deep amber color, 3-5 minutes. Add the butter and stir until it’s melted and combined, 1-2 minutes. Slowly pour in the heavy cream, stirring until it’s well combined. Remove from heat and stir in the sea salt. Set aside to cool.
  • Prepare the Wet Ingredients:
    Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
