Service @ Seven is an intimate, single-seating blind tasting menu hosted at a hidden communal table in Atlanta. Volume 04 explored peak summer produce, deploying aggressive, classical savory techniques to shift traditional perspectives on fresh fruit.
We leaned away from the expected sweet profiles of orchard and vine fruits, experimenting with elements of fire, salt, time, and fat instead. The multi-course progression stayed entirely anonymous until guests were seated, with each plate introduced through storytelling and intentional evolutionary links from the kitchen.
The evening featured landscapes of dense, complex savory manipulations: conceptually playing with deep, game-cutting reductions mirroring classic Bordelaise built on highly concentrated blackberries, and developing rich, caramelized profiles derived from slow-braising savory proteins in fresh watermelon juices.
"We didn't build a restaurant; we hijacked a daytime coffee shop and flipped it in an hour. We served six courses on mismatched vintage plates pulled from the local Habitat for Humanity ReStore. Even the fig leaves used for the dessert were sourced by a local forager straight out of the urban Atlanta forest. That is the actual ethos of this project: take what is given, push it to the brink, and leave no trace when you are done."
