But step through the door, and you are hit with a sleek, dimly lit room, an incredible hip-hop soundtrack, and some of the most aggressive, forward-thinking cocktail building happening anywhere in Europe. It is the absolute antithesis of the stuffy, quiet hotel bar.

The entire conceptual mandate of Le Syndicat is to defend and modernize classic French spirits. You will not find standard tequila or bourbon here. Instead, the menu is a masterclass in utilizing historical regional liqueurs—think Cognac, Armagnac, Calvados, and Suze—and treating them with modern mixology techniques like clarification, fat-washing, and carbonation.
