Truffle Mushroom Brie Pizza with Rosemary epitomizes indulgence… blending earthy, creamy, and aromatic flavors into one irresistible dish. This pizza elevates the traditional pizza with gourmet ingredients like sautéed mushrooms, creamy Brie, fresh rosemary, and the luxurious touch of truffle oil. Perfect for special occasions, dinner parties, or when you want to treat yourself to something extraordinary, this pizza delivers a symphony of flavors that delight the senses.

The base of this pizza is a fragrant garlic-thyme extra virgin olive oil puree. Unlike traditional tomato-based sauces, this light yet flavorful foundation enhances the toppings without overpowering them. The garlic provides a savory depth, while the thyme lends an earthy freshness that pairs beautifully with the other ingredients. This step is key to creating a balanced and cohesive flavor profile for the pizza.

The toppings are where the magic happens. Cremini mushrooms are sautéed in butter until golden brown, unlocking their rich, earthy flavor and eliminating moisture. These mushrooms bring a hearty texture to the pizza and balance the creamy decadence of the Brie cheese. With its luscious and slightly tangy profile, the Brie melts into the crust to create pockets of velvety goodness in every bite. A sprinkle of Parmesan cheese before baking enhances the depth of flavor, adding a nutty, savory element that complements the richness of the Brie. The mushrooms, Brie, and Parmesan are then finished with a drizzle of truffle oil, which infuses the pizza with its unmistakable, luxurious aroma.

Baking this pizza at 500°F ensures a crispy crust and perfectly melted cheese. The high heat caramelizes the toppings slightly, only deepening their flavor and creating a beautifully golden finish. Once out of the oven, the final touch is a sprinkle of finely chopped rosemary, which is added while the pizza is piping hot. This step allows the rosemary’s oils to bloom, releasing a fresh, herbal fragrance that complements the rich toppings. Letting the pizza rest for a moment helps the flavors meld together and makes it easier to slice and serve.

Truffle Mushroom Brie Pizza with Rosemary celebrates indulgent flavors and refined simplicity. Each bite combines the crispy crust, creamy melted Brie, earthy mushrooms, fragrant herbs, and the unmistakable aroma of truffle oil, creating a dish that feels both sophisticated and comforting. Truffle Mushroom Brie Pizza with Rosemary combines creamy Brie cheese, earthy mushrooms, and the luxurious aroma of truffle oil on a garlic-thyme-infused crust. Topped with fresh rosemary and baked to perfection, it’s a sophisticated yet comforting dish perfect for any occasion.

Ingredients

  • 1 ball of pizza dough (store bought or homemade)

  • 2 tablespoons extra virgin olive oil

  • 2 cloves of garlic

  • 1/2 pound cremini mushrooms

  • 1 tablespoon unsalted butter

  • 1 tablespoon truffle oil

  • 1 teaspoon fresh thyme

  • 1 teaspoon rosemary, freshly chopped

  • 8 ounces Brie cheese, sliced

  • 1/4 cup Parmesan cheese, grated

  • to taste, salt and ground black pepper

Directions

  • Prepare the Dough:
Preheat your oven to 500°F (260°C). If using a pizza stone, place it in the oven while it preheats.
Roll out the pizza dough on a floured surface into your desired shape and thickness. Transfer to a pizza peel or baking sheet.
  • Make the Garlic-Thyme Base:
Blend the garlic cloves with the extra virgin olive oil and fresh thyme leaves until smooth.
  • Sauté the Mushrooms:
Heat the butter in a skillet over medium heat. Add the sliced mushrooms and cook until they’re browned and the moisture has evaporated, 5-7 minutes. Season with salt and ground black pepper to taste. Remove from heat and set aside.
  • Assemble the Pizza:
Spread the garlic-thyme base evenly over the surface of the pizza dough. Spread the sautéed mushrooms evenly over that. Sprinkle with Parmesan cheese and evenly spread slices of brie cheese over the top of the pizza. Drizzle the truffle oil over the toppings.
  • Bake the Pizza:
Transfer the pizza to the preheated oven or pizza stone. Bake for 8-10 minutes until the crust is golden and crispy and the cheese is bubbly.
  • Add Rosemary and Rest:
After removing the pizza from the oven, immediately sprinkle the finely chopped rosemary evenly over the top. Let the pizza sit for 5 minutes to cool and to allow the rosemary’s aromatic oils to bloom.
  • Finish and Serve:
Drizzle with additional truffle oil for extra pop. Slice and serve immediately.

Notes

  • For a beautifully crisp crust, sprinkle a generous layer of cornmeal on your pizza peel or baking sheet before placing the dough. The cornmeal prevents sticking and creates a deliciously textured bottom that pairs perfectly with the pizza’s rich toppings.
  • If you don’t have truffle oil, make extra garlic-thyme EVOO to use for the base. Drizzle a little over the finished pizza after baking for an aromatic, earthy flavor that perfectly complements the mushrooms and Brie. This homemade infused oil adds richness without needing truffle oil.
