The Sun-Dried Tomato and Smoked Sausage Orzo Skillet is a flavorful one-pan dish that combines browned smoked sausage, sun-dried tomatoes, and orzo pasta with herbs and creamy Parmesan cheese for a satisfying and comforting meal.

Ingredients

  • 1 pound smoked sausage, sliced

  • 2 cups orzo pasta

  • 1 medium onion, diced

  • 3 cloves of garlic, minced

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 tablespoon oregano, freshly chopped

  • 1 tablespoon basil, freshly chopped

  • 1/2 teaspoon red pepper flakes

  • 4 cups chicken broth

  • 1 1/2 cups Parmesan cheese, grated

  • 2 tablespoons extra virgin olive oil

  • to taste, salt and ground black pepper

Directions

  • Brown the Sausage:
    In a large skillet or pan, heat the extra virgin olive oil over medium heat. Add the sliced smoked sausage and brown them for about 5-7 minutes. Remove the browned sausage from the skillet and set them aside.
  • Sauté Onions and Garlic:
    In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent.
  • Toast the Orzo:
    Add the orzo pasta to the skillet and toast it for about 2 minutes, stirring frequently until the orzo turns slightly golden.
  • Add Sun-Dried Tomatoes and Spices:
    Stir in the chopped sun-dried tomatoes, oregano, basil, and red pepper flakes. Cook for an additional 2 minutes, allowing the flavors to meld.
  • Pour in the Broth:
