1 pound ground chicken
2 tablespoons extra virgin olive oil
4 cloves garlic, minced

1 onion, diced

1 teaspoon turmeric
1/2 teaspoon red pepper flakes

1/2 cup raisins
1 lemon, juiced and zested
- For the Saffron Rice
1 cup jasmine rice
2 cups chicken broth
1 teaspoon saffron threads
1 clove garlic, smashed
1/2 teaspoon salt
1 tablespoon extra virgin olive oil
- For the Bowl
1 cup arugula
2 tablespoons toasted almonds
fresh mint leaves
- For the Saffron Oil
2 tablespoons extra virgin olive oil
1/2 teaspoon saffron threads
Directions
- Infuse the Saffron:
In a small bowl, add 1 teaspoon of saffron threads . Pour over 3 tablespoons of warm water and let steep for at least 10 minutes while you prepare the other ingredients. - Make the Saffron Rice:
Heat 2 cups chicken broth over medium heat. Add the smashed garlic clove, salt, extra virgin olive oil, and thr saffron infusion. Stir in 1 cup jasmine rice, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Turn off the heat and let the rice sit, covered, for another 5 minutes. Remove garlic clove, then fluff the rice with a fork. - Cook the Spiced Ground Chicken:
In a large skillet, heat the extra virgin olive oil over medium. Add diced onion and cook until softened, 4-5 minutes. Stir in the minced garlic and grated ginger. Cook for another minute. Add the cumin, coriander, paprika, turmeric, red pepper flakes, black pepper, and salt. Stir to coat. Add the ground chicken and cook until browned and cooked through, 8–10 minutes. Stir in raisins, lemon zest, and lemon juice. Let simmer for 2 more minutes, then remove from heat. - Make the Saffron Oil:
