Ingredients

  • 1/2 watermelon, diced into cubes

  • 4 cups water

  • 1 lime, juiced

  • 2 tablespoons honey

  • 6 sprigs of thyme

  • ice

  • for serving, lime wedge

  • for garnish, sprigs of thyme

Directions

  • Blend the Watermelon:
    Combine the water and watermelon cubes in a blender. Pulse for several seconds until the mixture until smooth.
  • Strain:
    Pour the mixture through a fine mesh sieve into a large pitcher to remove any the pulp.
  • Combine Flavors:
    Return the strained watermelon mixture to the blender. Add honey and lime juice, and mix until combined.
  • Infuse and Chill:
    Add the fresh thyme sprigs to the blended mixture. Refrigerate the mixture for at least 1 hour to allow the thyme flavor to infuse.
