Ingredients
1 ripe cantaloupe
1 cup water
1 cup granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon lemon juice
Directions
- Cut the cantaloupe in half and remove the seeds and rind. Cut the flesh into small cubes.
- In a saucepan, combine the cantaloupe cubes and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for 15-20 minutes until the cantaloupe is soft and cooked.
