What is triple tail snapper?

Triple tail snapper, also known simply as triple tail or tripletail, is a type of fish found in warm coastal waters around the world, particularly in tropical and subtropical regions. It is known for its distinct appearance, characterized by its three rounded fins, which resemble tails. Triple tail snapper has a mild and sweet flavor with firm, white flesh, making it a popular choice for seafood dishes. It can be prepared in various ways, including grilling, baking, frying, or steaming. Many people enjoy its delicate taste and tender texture, making it a sought-after choice for seafood dishes.

In a small saucepan, the stage is set for the creation of the star ingredient: the chipotle-plum glaze. Plums, their ripe sweetness tantalizingly offset by the fiery kick of dried chipotle peppers, mingle with honey, soy sauce, and a splash of lime juice. Over gentle heat, they simmer and meld, each ingredient adding its own unique note to the culinary symphony.

While the glaze bubbles and thickens, the triple tail snapper fillets await their moment in the spotlight. Arranged on a parchment-lined baking sheet, they lay in anticipation, their tender flesh ready to soak in the flavors of the glaze. With a gentle seasoning of salt and ground black pepper and a drizzle of extra virgin olive oil, they are poised for perfection.

Into the oven they go, the air soon filled with the tantalizing aroma of roasting fish. As they bake, their flesh transforms, turning opalescent and tender under the gentle heat. Meanwhile, the chipotle-plum glaze reaches its crescendo, its flavors deepening and intensifying with each passing minute.

When the moment arrives, the fillets emerge from the oven, their golden exteriors glistening in the soft light. With a delicate touch, they are lavishly coated with the rich, velvety glaze, its hues a testament to the depth of flavor contained within. Back into the oven they go, but this time under the broiler, where the glaze caramelizes and shimmers, infusing the fish with its smoky sweetness.

That simply, the dish is nearly complete. The chipotle plum glazed triple tail snapper fillets are plated with care, their surfaces adorned with a sprinkling of vibrant green onions and a wedge of fresh lime. With each bite, diners are transported on a gustatory journey, their taste buds awakened to the symphony of flavors that dance across their palates.

In this culinary creation, every element plays its part, from the delicate sweetness of the plums to the fiery heat of the chipotle peppers. It is a dish that celebrates the artistry of flavor, inviting diners to savor each moment and revel in the joy of indulgence.

Chipotle-Plum Glazed Triple Tail Snapper, is a delectable fusion of flavors that brings together the freshness of triple tail snapper with the rich and aromatic blend of chipotle peppers and sweet plums.

Ingredients

  • 4 fillets of 4 triple tail snapper

  • 3 3 plums, pitted and chopped

  • 2 2 chipotle peppers, rehydrated and chopped

  • 2 cloves of 2 garlic, minced

  • 1 tablespoon 1 soy sauce

  • 2 tablespoons 2 honey

  • 2 tablespoons 2 lime juice

  • 2 tablespoons 2 extra virgin olive oil

  • to taste, salt and ground black pepper

  • for garnish, lime wedges

  • for garnish, chopped green onions

Directions

  • Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • Make the Chipotle Plum Glaze:
In a small saucepan, combine the plums, dried chipotle peppers, honey, soy sauce, lime juice, and minced garlic. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Let it cook for about 10-15 minutes until the plums are soft and the sauce thickens slightly. Remove from heat and set aside.

Using an immersion blend – or transfer to a blender to complete – puree the mixture.
  • Bake the Triple Tail Snapper Fillets:
Place the triple tail snapper fillets on the prepared baking sheet. Season them lightly with salt and ground black pepper. Drizzle with extra virgin olive oil. Bake in the preheated oven for about 15-20 minutes, or until the meat is turning white and flakes easily.
  • Apply ChipotlePlum Glaze:
Remove the baking sheet from the oven. Using a brush or spoon, generously coat the baked triple tail snapper fillets with the chipotle plum glaze.

Turn the heat of the oven to broil, or it’s highest temperature setting.
  • Broil the Glazed Snapper:
Return the glazed snapper fillets to the oven and continue baking for an additional 3-4 minutes. This allows the glaze to caramelize slightly and infuse the fish with flavor. Keep a close eye on them to prevent burning.
  • Garnish and Serve:
Remove the chipotle-plum glazed triple tail snapper fillets from the oven. Garnish with freshly chopped green onions, a slice of lime, and serve immediately.

Enjoy the flavorful and succulent fish with the perfect balance of sweet and spicy notes from the chipotle plum glaze.
