Crispy Fried Ocean Perch with Saffron Aioli is a sophisticated dish that combines the delicate, flaky texture of fried ocean perch with the rich, aromatic depth of a saffron-infused aioli, creating a perfect balance of flavors and textures.

Ingredients

  • For the Crispy Fried Ocean Perch:
  • 4 fillets of 4 ocean perch

  • 1 cup 1 all-purpose flour

  • 2 beaten 2 eggs

  • 2 cups 2 panko breadcrumbs

  • to taste, salt and ground black pepper

  • for frying, vegetable oil

  • For the Saffron Aioli:
  • 1 cup 1 extra virgin olive oil

  • 2 large 2 egg yolks, at room temperature

  • 1 clove of 1 garlic, minced

  • 1 tablespoon 1 lemon juice

  • 1/2 teaspoon 1/2 saffron threads

  • to taste, salt

Directions

  • Infuse Saffron in Extra Virgin Olive Oil:
    Heat 2 tablespoons of the extra virgin olive oil with the saffron threads in a small saucepan over low heat just until warm. Do not boil. Remove from heat and let it cool to room temperature.
  • Make the Aioli:
    In a bowl, whisk together the egg yolks and minced garlic. Slowly incorporate the saffron-infused olive oil, then gradually add the remaining olive oil while continuously whisking until the mixture emulsifies and thickens. Stir in the lemon juice and season with salt. Set aside in the fridge until ready to use.
  • Dredge the Fish:
    Season the perch fillets with salt and ground black pepper. Dredge each fillet in flour, dip into beaten eggs, and then coat with panko breadcrumbs.
  • Fry the Fish:
    Heat vegetable oil – 1″ to 2″ – in a large skillet over medium-high heat. Fry the breaded fillets for 3-4 minutes on each side, or until golden and crispy. Drain on paper towels.
  • Serve:
    Plate the crispy fried ocean perch fillets and serve with a dollop of the saffron aioli on the side or drizzled over the top.
