  • 3 large 3 sweet potatoes, cut into wedges

  • 2 tablespoons 2 extra virgin olive oil

  • 4 slices of 4 bacon, chopped

  • 1/2 cup 1/2 maple syrup

  • 1 tablespoon 1 Dijon mustard

  • 1 teaspoon 1 paprika

  • to taste, salt and ground black pepper

  • for garnish, parsley

Directions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare the Sweet Potatoes:
    In a large mixing bowl, toss the sweet potato cubes with the extra virgin olive oil, salt, ground black pepper, and paprika until evenly coated.
  • Roast the Sweet Potatoes:
    Spread the seasoned sweet potatoes out in a single layer on a baking sheet lined with parchment paper or aluminum foil. Roast in the preheated oven for about 25-30 minutes, or until tender and starting to caramelize around the edges.
  • Cook the Bacon:
