Roasted Brussels Sprouts Caesar Salad

Jump to Recipe

The Roasted Brussels Sprouts Caesar Salad is a culinary creation that reimagines the classic Caesar salad by introducing the deep, nutty flavors of roasted Brussels sprouts. This innovative dish stands as a testament to the versatility and robust flavor profile of Brussels sprouts, transforming a traditional salad into a hearty, flavorful meal that can serve as both a sophisticated side dish and a standout main course.

The salad begins with the preparation of the Brussels sprouts, which are shaved and tossed in a light coating of extra virgin olive oil, seasoned with salt and ground black pepper, and then roasted to perfection. The roasting process is crucial, as it deepens the flavors of the Brussels sprouts, caramelizing their natural sugars and bringing out a complexity that raw sprouts cannot offer. The outer edges turn crispy, offering a delightful contrast to the tender, almost sweet center. This technique not only enhances the texture but also the flavor profile, making the Brussels sprouts the star of the dish.

Once roasted, the Brussels sprouts are then combined with a rich, creamy Caesar dressing. The dressing is a harmonious blend of mayonnaise, fresh garlic, lemon juice, Worcestershire sauce, Dijon mustard, and anchovies, whisked together until smooth. Parmesan cheese is added for its salty, umami depth, perfectly complementing the earthy Brussels sprouts. This Caesar dressing adheres to the sprouts, ensuring each bite is enveloped in its tangy, savory goodness.

The inclusion of toasted breadcrumbs introduces an additional layer of texture and flavor. They are sprinkled over the salad, adding a crunch that contrasts beautifully with the creamy dressing and the tender roasted sprouts. This element is a nod to the croutons traditionally found in Caesar salads, but with a lighter, more nuanced touch.

To serve, the salad is garnished with additional Parmesan cheese, lending a final note of richness and complexity. The result is a dish that is deeply satisfying, with a balance of flavors and textures that dance across the palate. The roasted Brussels sprouts bring warmth and depth, the Caesar dressing adds creaminess and zest, and the toasted breadcrumbs provide a crunchy counterpoint that elevates the salad to new heights.

The Roasted Brussels Sprouts Caesar Salad celebrates the convergence of simplicity and sophistication, where every ingredient is chosen for its ability to contribute to the overall harmony of the dish. It is perfect for any occasion, from a casual weeknight dinner to a festive gathering, offering a fresh take on a beloved classic that is sure to delight and satisfy.

This salad stands as a reminder of the transformative power of cooking, where traditional ingredients can be reinterpreted and elevated through simple techniques and thoughtful combinations. The Roasted Brussels Sprouts Caesar Salad is a testament to the beauty of culinary creativity, offering a unique and memorable dish that pays homage to its classic roots while boldly charting its own course.

The Roasted Brussels Sprouts Caesar Salad is a modern twist on a classic, blending the caramelized richness of roasted Brussels sprouts with the creamy, tangy depth of Caesar dressing, finished with a crunchy topping of toasted breadcrumbs for a dish that’s both comforting and refreshingly innovative.

Ingredients

  • For the Salad
  • 1 pound 1 Brussels sprouts, shaved

  • 2 tablespoons 2 extra virgin olive oil

  • 1/2 cup 1/2 Parmesan cheese, grated

  • 1/2 cup 1/2 breadcrumbs, toasted

  • For the Dressing
  • 1/2 cup 1/2 mayonnaise

  • 2 cloves of 2 garlic, minced

  • 2 tablespoons 2 lemon juice

  • 1 teaspoon 1 Worcestershire sauce

  • 1 teaspoon 1 Dijon mustard

  • 1/2 cup 1/2 Parmesan cheese, grated

  • 2 fillets of 2 anchovy, minced

  • 2 tablespoons 2 extra virgin olive oil

  • to taste, salt and ground black pepper

Directions

  • Roast the Brussels Sprouts:
Preheat your oven to 400°F (200°C). Toss the shaved Brussels sprouts with 2 tablespoons of extra virgin olive oil, salt, and ground black pepper. Spread on a baking sheet in a single layer and roast for about 10-15 minutes, or until they’re crispy and golden brown on the edges. Because they’re shaved, they will cook quickly, so keep an eye on them.
  • Toast the Breadcrumbs:
In a small skillet over medium heat, add 1/2 cup of breadcrumbs. Stir the breadcrumbs frequently for about 2-3 minutes or until they’re golden brown and toasted. Remove from heat and let them cool.
  • Prepare the Caesar Dressing:
Whisk together mayonnaise, minced garlic, lemon juice, Worcestershire sauce, Dijon mustard, grated Parmesan, anchovy fillets, and extra virgin olive oil in a bowl until smooth and creamy. Season with salt and ground black pepper to taste.
  • Assemble the Salad:
In a large salad bowl, combine the roasted shaved Brussels sprouts with the Caesar dressing, tossing until well coated. Fold in most of the grated Parmesan cheese, reversing some for a garnish.
  • Serve:
Garnish with extra Parmesan cheese and toasted breadcrumbs. Serve room temperature, or chill and serve later.
