Sweet Tamarind Agua Fresca is a refreshing, tangy drink perfect for summer. Enjoy the balance of tart tamarind, fresh lime juice, and a touch of sweetness.

Ingredients

  • 10-15 sweet tamarind pods (or 1/2 cup tamarind paste)

  • 4 cups water, divided

  • 1/4 cup honey

  • 1 lime, juiced

  • ice cubes

  • for serving, lime wedges

Directions

  • Prepare the Tamarind:
    If using tamarind pods, peel off the shells and remove any loose debris and seeds. Then, soak the tamarind pulp 2 cups of hot water for 30 minutes to soften it. Use your hands or a spoon to break up the soaked tamarind, releasing the pulp into the water. Strain the mixture through a fine mesh sieve or cheesecloth into a pitcher. Press the pulp to extract as much liquid as possible.
  • Mix the Agua Fresca:
    Add the remaining 2 cups of water, honey, and lime juice to the tamarind concentrate. Stir well until the honey is well combined.
  • Chill and Serve:
    Refrigerate the agua fresca for at least 1 hour to allow the flavors to meld. Serve over ice and with with lime wedges.
