  • 4 large beets, peeled and cut into cubes

  • 2 tablespoons extra virgin olive oil

  • to taste, salt and ground black pepper

  • 1/2 cup blood orange juice, freshly squeezed (from ~2 oranges)

  • 1 tablespoon ginger, freshly grated

  • 2 tablespoons honey

  • 1 tablespoon balsamic vinegar

  • 1 clove of garlic, minced

  • for garnish, freshly chopped parsley

Directions

  • Roast the Beets:
    Preheat your oven to 425 °F (220°C). Toss the beets with extra virgin olive oil, salt, and ground black pepper. Spread them out on a baking sheet in a single layer.

    Roast in the preheated oven for 25-30 minutes or until tender and caramelized around the edges. Turn the beets halfway through the cooking time to ensure even roasting.
  • Prepare the Blood Orange Ginger Glaze:
