Ingredients

  • 1 1/2 pounds 1 1/2 fingerling potatoes, sliced into 1/4″ rounds

  • 3 3 green onions, chopped

  • 1 tablespoon 1 parsley, freshly chopped

  • 3 tablespoons 3 extra virgin olive oil

  • 2 tablespoons 2 apple cider vinegar

  • 1 tablespoon 1 Dijon mustard

  • 1 tablespoon 1 honey

  • to taste, salt and ground black pepper

Directions

  • Cook the Potatoes:
