Ingredients

  • 1 large tropical avocado

  • 1 cup corn kernels

  • 1 small red onion, diced

  • 1 small jalapeno, seeded and finely chopped

  • 1 tablespoon mezcal

  • 1 lime, juiced

  • 1/4 cup cilantro, freshly chopped

  • to taste, salt and ground black pepper

Directions

  • Prepare the Corn:
    Char the corn in a hot skillet until golden and slightly charred, about 3-4 minutes. Set aside to cool.
  • Mash the Avocado:

  • Combine Ingredients:
