Ingredients

  • For the Bellini:
  • 2 ounces 2 peach puree

  • 1 ounce 1 thyme syrup

  • chilled prosecco

  • for garnish, thyme sprig

  • For the Thyme Syrup:
  • 1 cup 1 water

  • 1 cup 1 sugar

  • 8 sprigs of 8 thyme, fresh

  • For the Peach Puree:
  • 2 ripe 2 peaches, peeled and pitted

  • 1 tablespoon 1 lemon juice, freshly squeezed

Directions

  • Make the Thyme Syrup:
    In a small saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Add the fresh thyme sprigs to the syrup and simmer for 5 minutes to infuse the thyme flavor. Remove from heat and let the syrup cool completely. Once cooled, strain out the thyme sprigs. This syrup can be made in advance and stored in the refrigerator.
  • Prepare the Peach Puree:
    Add the peeled and pitted peaches to a blender or food processor. Add the lemon juice and blend until smooth.
  • Assemble the Bellini:
