Ingredients

  • 16 ounces 16 gnocchi

  • 1 pound 1 Italian sausage

  • 3 cups 3 mushrooms, sliced

  • 1 28-oz can 1 San Marzano tomatoes

  • 3 cloves of 3 garlic, minced

  • 1 medium 1 onion, diced

  • 1 cup 1 basil, freshly chopped

  • 1/2 cup 1/2 Parmesan cheese, grated

  • 2 tablespoons 2 extra virgin olive oil

  • to taste, salt and ground black pepper

Directions

  • Brown the Sausage:
    In a large skillet, cook the Italian sausage over medium heat until browned and crumbled, 5-7 minutes. Remove the sausage from the skillet and set it aside.
  • Sauté the Mushrooms:
    Add the sliced mushrooms and cook until they’re soft and starting to brown, about 5 minutes. Remove the mushrooms from the skillet and set aside.
  • Prepare the Sauce:
    In the same skillet, add the extra virgin olive oil. Sauté the onions and garlic until translucent, 2-3 minutes. Add the San Marzano tomatoes to the skillet. Let the sauce simmer for 10-15 minutes. if the tomatoes are whole, gently press to crush them as they cook. Season with salt and ground black pepper to taste.
  • Add Gnocchi:
    Add the gnocchi directly into the tomato sauce. If the sauce is too thick, add a bit of chicken or vegetable broth to give the gnocchi some liquid to cook in. Let the gnocchi simmer in the sauce until they are tender and cooked through, about 5-7 minutes.
  • Return the Mushrooms and Sausage:
    Add the cooked sausage and mushrooms back into the skillet. Stir gently to combine everything and ensure the gnocchi is evenly coated in the sauce.
  • Finishing Touches and Serve:
    Fold in half of the chopped basil. Adjust seasoning as you see fit.
