Honey Mustard Glazed Roasted Brussels Sprouts

Jump to Recipe

Honey Mustard Glazed Roasted Brussels Sprouts is a dish that effortlessly combines the rustic charm of roasted vegetables with the sophistication of a perfectly balanced glaze. This recipe takes the humble Brussels sprout, a staple of winter fare, and elevates it to culinary excellence, making it a standout side that could easily steal the spotlight from the main course.

The foundation of this dish is the Brussels sprouts themselves, chosen for their fresh, earthy flavor and hearty texture. When roasted, these sprouts transform, their outer leaves turning irresistibly crispy, while the centers become tender and sweet. This natural sweetness is the perfect canvas for the honey mustard glaze to come, a concoction that is both simple in its make-up and complex in its flavor profile.

The glaze, a blend of sweet honey and tangy mustard, with notes of garlic and a dash of apple cider vinegar, clings to each sprout, adding a glossy, flavorful coating that caramelizes beautifully in the oven’s heat. This process not only enhances the sprouts’ texture but also deepens their flavor, creating a sweet and savory experience that is both satisfying and addictive.

To finish, a light sprinkle of grated Parmesan cheese adds a layer of salty, umami richness that compliments the tanginess of the glaze. This cheese melts slightly upon contact, forming little pockets of creamy goodness amid the crisp sprouts. The final garnish of chopped parsley not only adds a pop of color but also a fresh, herbal brightness that lifts the dish, balancing the richness of the Parmesan and the depth of the honey mustard glaze.

Honey Mustard Glazed Roasted Brussels Sprouts is a testament to the beauty of simplicity in cooking. It showcases how a few quality ingredients, thoughtfully combined and cooked with care, can result in a dish that is both comforting and refined. Perfect for any occasion, from a casual weeknight dinner to a festive holiday feast, this dish invites you to reconsider the Brussels sprout, not as a mere side but as a celebration of flavor, texture, and the joy of eating well.

This dish pairs exceptionally well with Tagliatelle al Pomodoro, Sea Scallops, and Mozzarella, creating a harmonious dining experience that balances richness with freshness. The tangy and sweet flavors of the glazed Brussels sprouts complement the creamy notes of the fresh mozzarella and the sweet, delicate taste of the sea scallops. The robust, earthy tones of the Brussels sprouts offer a delightful contrast to the light and tangy San Marzano tomato sauce, enhancing the overall depth of the pasta dish. Together, these dishes combine to offer a symphony of textures and tastes, where the rustic crunch of the sprouts plays off the silky smoothness of the tagliatelle, making for a truly sophisticated and satisfying meal.

Honey Mustard Glazed Roasted Brussels Sprouts present a delightful medley of crispy, caramelized edges and tender hearts, coated in a sweet and tangy glaze that elevates this classic side dish to new heights of flavor.

Ingredients

  • 1 pound 1 Brussels sprouts, trimmed and halved

  • 2 tablespoons 2 extra virgin olive oil

  • 2 tablespoons 2 honey

  • 2 tablespoons 2 whole grain mustard

  • 1 tablespoon 1 Dijon mustard

  • 1 tablespoon 1 apple cider vinegar

  • 1 clove of 1 garlic, minced

  • to taste, salt and ground black pepper

  • for garnish, grated Parmesan cheese

  • for garnish, freshly chopped parsley

Directions

  • Preheat the Oven and Prepare Brussels Sprouts:
Preheat your oven to 425°F (218°C). In a large bowl, toss the Brussels sprouts with extra virgin olive oil, salt, and ground black pepper until they are evenly coated.
  • Roast the Brussels Sprouts:
Spread the Brussels sprouts on a baking sheet in a single layer, cut side down, to maximize browning. Roast in the preheated oven for 20 minutes, or until they are browned and crispy on the edges. Halfway through the cooking time, give the pan a shake or use a spatula to turn the sprouts for even roasting.
  • Prepare the Honey Mustard Glaze:
While the Brussels sprouts are roasting, whisk together the honey, Dijon mustard, whole grain mustard, apple cider vinegar, and minced garlic in a small bowl. Season with salt and ground black pepper to taste.
  • Glaze the Brussels Sprouts:
Once the Brussels sprouts are roasted and have a nice char on them, remove them from the oven. Transfer the Brussels sprouts to a large bowl, pour the honey mustard glaze over them, and toss until they are evenly coated with the glaze.
  • Finish Roasting the Glazed Brussels Sprouts:
Return the glazed Brussels sprouts to the baking sheet, and spread them out in an even layer. Place them back in the oven and roast for an additional 5 minutes. This extra time allows the glaze to caramelize slightly and adhere to the Brussels sprouts.
  • Serve:
Transfer the glazed Brussels sprouts to a serving dish. Sprinkle grated Parmesan cheese and freshly chopped parsley over the Brussels sprouts.
