Ingredients

  • 16 ounces 16 sweet potato gnocchi

  • 1 pound 1 lamb sausage

  • 1 cup 1 portobello mushrooms, sliced

  • 3 tablespoons 3 extra virgin olive oil

  • 4 tablespoons 4 butter

  • 3 cloves 3 garlic, minced

  • 1 tablespoon 1 fresh thyme leaves

  • 1/2 cup 1/2 parmesan cheese, grated

  • salt and ground black pepper, to taste

  • In a large skillet, heat the olive oil over medium heat. Remove the lamb sausage from its casing and crumble it into the skillet. Cook until browned.
  • Add the butter to the skillet. Once melted, add the mushrooms and sauté until they’re soft and have released their moisture.
  • Add the minced garlic and thyme. Sauté for another 1-2 minutes, or until fragrant.
  • Add the cooked sweet potato gnocchi to the skillet. Toss everything together until the gnocchi is well-coated and heated through. Season with salt and freshly ground black pepper to taste.
  • Transfer to serving plates. Garnish with additional thyme and grated parmesan cheese.
