Ingredients

  • 8 ounces 8 tagliatelle pasta

  • 1 pound 1 oyster mushroom, roughly chopped

  • 3 cloves 3 garlic, minced

  • 1 1 shallot, minced

  • 3 cups 3 chicken broth

  • 1/2 cup 1/2 soy sauce

  • 2 tablespoons 2 extra virgin olive oil

  • 1/4 cup 1/4 parmesan cheese

  • 1/2 cup 1/2 heavy cream

  • 1/2 cup 1/2 green onion, chopped

  • 1 tablespoon 1 ground black pepper

Directions

  • In a deep pan or dutch oven, heat the olive oil over medium heat. Add the oyster mushrooms to the skillet and cook 5-7 minutes until they start to brown and become tender. Using a slotted spoon, remove the mushrooms and set aside.
  • Add the minced garlic and shallot, and sauté for 2-3 minutes until fragrant and lightly golden.
  • Pour the chicken broth and soy sauce into the pan or dutch oven, and bring to a boil. Add the uncooked tagliatelle pasta noodles, and stir to combine. Cook the noodles 5-7 minutes at a gentle boil, or until al dente per the packaged instructions.
  • Stir in the heavy cream, parmesan cheese, ground black pepper, and chopped green onion. Mix until the cheese melts. Fold in the sautéed oyster mushrooms.
  • Remove the pan or dutch oven from the heat and sprinkle with extra chopped green onion over the dish. Serve immediately.
