Nestled in the heart of this flavorful Spicy Chipotle Garbanzo Bean and Vegetable Stew is a medley of ingredients that dance together in harmonious celebration of taste and texture. This stew is a testament to the art of combining spices, vegetables, and legumes to create a hearty and satisfying dish that beckons comfort and warmth.

Ingredients for Spicy Chipotle Garbanzo Bean and Vegetable Stew

At its core, this stew embraces the versatility of garbanzo beans, also known as chickpeas. Whether you opt for dried garbanzo beans soaked and cooked to tender perfection or the convenience of canned shelled garbanzo beans, they form the foundation of this dish. These legumes, rich in both flavor and nutrition, offer a velvety backdrop upon which the other ingredients can shine.

To elevate the stew’s complexity and depth, dried chipotle peppers are rehydrated to awaken their smoky, earthy essence. This process infuses the stew with a gentle but unmistakable heat, adding a touch of southwestern flair. The removal of seeds and fine chopping of the chipotle peppers ensure an even distribution of their fiery personality throughout the stew.

As the aroma of sizzling onions, carrots, celery, and garlic wafts through your kitchen, you know you’re embarking on a culinary journey worth savoring. The sautéed onions become translucent, releasing their sweet undertones, while the minced garlic and ground cumin unleash their fragrant charms. Paprika, with its rich and smoky notes, joins the ensemble, infusing the stew with an irresistible warmth.

The arrival of diced zucchini and chopped cabbage signifies the stew’s vibrant vegetable symphony. These fresh and wholesome ingredients add both substance and vibrancy to the dish. The zucchini contributes a delicate crunch, while the cabbage imparts a comforting softness that melds seamlessly with the garbanzo beans.

Vegetable broth, the stew’s liquid conductor, is poured in, elevating the harmony of flavors. The amount can be tailored to your preference depending on whether you prefer a hearty and thick stew or a more brothy consistency. Seasoned with a judicious pinch of salt and a twist of ground black pepper, the stew’s depth of flavor deepens, inviting your taste buds to revel in its splendor.

The addition of canned tomatoes adds another layer of richness and depth. These tomatoes infuse the stew with a bright and tangy sweetness, balancing the smokiness of the chipotle peppers and enhancing the overall flavor profile.

With the stage set, the stew gently simmers, allowing the cast of ingredients to intermingle and transform into a flavorful ensemble. During this simmering symphony, the flavors meld, and the spicy chipotle garbanzo bean and vegetable stew becomes a comforting melody of taste and texture.

When it’s time to serve, each bowl is a canvas awaiting its final flourish. Fresh cilantro leaves, vibrant in color and aroma, add a burst of herbal freshness. A lime wedge, poised and zesty, imparts a citrusy zing that brightens every spoonful. Crumbled cotija cheese, with its salty and slightly tangy personality, introduces a creamy contrast, rounding out the stew’s complexity.

As you savor each spoonful, you’ll discover a stew that celebrates the balance of heat and earthiness, tenderness and crunch, and the harmonious melding of spices and vegetables. This Spicy Chipotle Garbanzo Bean and Vegetable Stew is more than a meal; it’s a sensory experience that envelops you in its inviting embrace.

With every bite, you’re reminded of the joys of cooking—of selecting ingredients, of coaxing flavors to mingle, and of the ultimate satisfaction that comes from sharing a lovingly crafted dish. It’s a stew that warms the soul and leaves an indelible mark on your culinary repertoire, a testament to the power of spices and the beauty of balanced flavors.

Spicy Chipotle Garbanzo Bean and Vegetable Stew is a flavorful medley of southwestern-inspired spices, tender garbanzo beans, and a vibrant vegetable ensemble, creating a comforting and satisfying dish.

Ingredients

  • 2 cups 2 shelled garbanzo beans (or 1 cup dried garbanzo beans)

  • 3 dried 3 chipotle peppers

  • 2 medium 2 zucchinis, diced

  • 1 head of 1 cabbage, chopped

  • 1 large 1 carrot, diced

  • 1 large 1 onion, diced

  • 2 stalks of 2 celery, diced

  • 5 cloves of 5 garlic, minced

  • 4 cups 4 vegetable broth

  • 1 can (28 oz.) 1 tomatoes, diced or whole

  • 2 tablespoons 2 extra virgin olive oil

  • to taste, salt and ground black pepper

  • for garnish, cilantro

  • for garnish, lime wedges

  • for garnish, crumbled cojita cheese

Directions

  • Prepare Dried Garbanzo Beans (if using):
If you’re using dried garbanzo beans, drain and rinse them after soaking overnight. In a large pot, add the soaked beans, cover with water, and bring to a boil. Reduce heat, simmer for 1-1.5 hours, or until tender. Drain and set aside.
  • Unshell Shelled Garbanzo Beans (if using): If you’re using shelled garbanzo beans (canned or cooked), you can unshell them by gently pressing each bean between your thumb and forefinger to remove the outer skin.
  • Rehydrate Chipotle Peppers:
Place the dried chipotle peppers in a bowl and cover them with hot water. Let them soak for about 20-30 minutes until they become pliable. Remove the seeds and finely chop them.
  • Sauté Vegetables:
In a large, heavy-bottomed pot, heat the extra virgin olive oil over medium heat. Add the onion, carrot, celery, and minced garlic. Sauté for 3-4 minutes until the onions become translucent and aromatic.

Stir in the chopped chipotle peppers, ground cumin, and paprika. Stir to coat and sauté for an additional 1-2 minutes.
  • Add Zucchini and Cabbage:
Add the diced zucchini, chopped cabbage, and garbanzo beans to the pot. Sauté for another 5 minutes, allowing the vegetables to soften slightly.
  • Add Broth and Tomatoes:
Pour in the vegetable broth and tomatoes, including their juices. Adjust the amount of broth to your preferred thickness. Season with salt and ground black pepper to taste.
  • Simmer:
Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 30 minutes to allow all the flavors to meld together. Stir occasionally.
  • Serve:
Ladle the spicy chipotle garbanzo bean and vegetable stew into bowls. Garnish with fresh cilantro leaves, a lime wedge, and crumbled cojita cheese.
