  • 1 large 1 red bell pepper, diced

  • 1 small 1 red onion, diced

  • 1 cup 1 kalamata olives, pitted and chopped

  • 1/4 cup 1/4 parsley, freshly chopped

  • 1/4 cup 1/4 Parmesan cheese, grated

  • For the Dressing
  • 1/4 cup 1/4 extra virgin olive oil

  • 2 tablespoons 2 lemon juice

  • 1 teaspoon 1 white wine vinegar

  • 1 clove of 1 garlic, minced

  • 1 tablespoon 1 honey

  • to taste, salt and ground black pepper
