Ingredients

  • 2 ounces 2 tequila

  • 2 ounces 2 corn syrup

  • 1 ounce 1 lime juice, freshly squeezed

  • 1/2 ounce 1/2 triple sec

  • ice

  • for rimming the glass, tajin

  • for garnish, roasted corn kernels

  • for garnish, lime wedge

  • For the Sweet Corn Syrup
  • 1 cup 1 fresh corn kernels

  • 1 cup 1 water

  • 1 cup 1 sugar

Directions

  • Make the Sweet Corn Syrup:
    In a saucepan, combine 1 cup of fresh corn kernels, 1 cup of water, and 1 cup of sugar. Bring to a boil, then simmer for about 15 minutes until the mixture thickens slightly and the sugar fully dissolves. Remove from heat and let the corn steep for another 15 minutes. Then, strain through a fine mesh sieve. Chill the syrup in the refrigerator until ready for use.
  • Rim the Glass:
    Rub the rim of a margarita glass with a lime wedge and dip it into Tajín to coat.
  • Mix the Cocktail:
    In a shaker, combine 2 ounces of tequila, 2 ounces of chilled sweet corn syrup, 1 ounce of lime juice, and 1/2 ounce of triple sec. Fill the shaker with ice and shake vigorously until well chilled.
  • Serve:
