Ingredients

  • 3-4 pounds 3-4 beef short ribs

  • to taste, salt and ground black pepper

  • 2 tablespoons 2 vegetable oil

  • 1 large 1 onion, chopped

  • 4 cloves of 4 garlic, minced

  • 2 tablespoons 2 paprika

  • 1 teaspoon 1 cayenne pepper

  • 1 tablespoon 1 dried thyme

  • 1 1 bay leaf

  • 2-3 cups 2-3 beef broth

  • 1/2 cup 1/2 tomato paste

  • 1/4 cup 1/4 apple cider vinegar

  • 2 tablespoons 2 brown sugar

  • 2 tablespoons 2 Worcestershire sauce

  • for garnish, fresh parsley

Directions

  • Brown the Beef Short Ribs:
    Season the short ribs generously with salt and ground black pepper. Heat the vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Brown the ribs on all sides for 4-5 minutes, and set them aside.
  • Sauté Vegetables and Spices:
    In the same pot, reduce the heat to medium and sauté the onion until it begins to soften, 2-3 minutes. Add the garlic, smoked paprika, cayenne, and thyme and cook until fragrant, about 1 minute.
  • Add Tomato Paste and Bay Leaf:

  • Deglaze and Add Liquids:

  • Braise the Ribs:
